You’d be surprised how many people walk into The Roasterie, spot our cold brew towers for the first time, and ask, “Is that even legal?” Honestly, fair question. The spirals, the tubes, the lab-like contraptions it does look like we’re brewing something suspicious. And in a way, we are. This stuff’s addictive.
What Makes It Different?
Our cold brew is made using a slow-drip system, not the common soak-and-wait method. It takes up to 16 hours for each batch to finish. Water moves drip by drip through a tall glass tower packed with ground espresso beans. That long, slow journey brings out all the smooth, bold, and rich flavours you don’t get with a quick brew.
We use our Italian Espresso House Blend, and the result is something close to a fine cognac—but without the booze. It's intense, chocolatey, layered, and naturally sweet. We don’t water it down. You’re getting the real concentrate, exactly as it comes out of the tower.

Why It’s Always Running Low
Here’s the thing:
Cold drip brewing is finicky as hell.
- Barometric pressure shifts? That throws it off.
- A few grams off in the grind? Wasted.
- A tiny temperature change outside? The whole batch could go sideways.
This is live coffee alchemy — and when it works, it’s magic. But when it doesn’t, we dump the batch. No room for “meh.” That’s why our cold brew isn’t just coffee — it’s a freaking event. And

It’s not just our customers loving it. We supply four major restaurants in Calgary with this same cold brew. Some shake it into cocktails, others work it into seasonal dishes—like a cold brew truffle sauce served with steak. No kidding. The chefs and bartenders are doing brilliant things with it.At the roasterie, we keep it closer to the source. You can have it neat over the rocks or in one of our cold brew menu drinks, like the East Coast or the Spritz de Paris. Different vibe, same slow-drip miracle.
