Only select farms in regions like Costa Rica’s Tarrazú and West Valley produce Geisha beans, and even fewer choose to process them with the honey method, which enhances the natural sweetness. Honey processing involves carefully removing the outer layers of the cherry and leaving some of the fruit’s pulp on the beans during drying. This method adds depth to the coffee, giving it a smooth, syrupy sweetness without the bitterness typical of some other processing methods.
