What is the Swiss Water Process? Let’s brew this down—pun intended!
This process sounds fancy, but it’s actually pretty simple:
Step 1: Raw, green beans, tossed in water.
What's happening: Everything soluble is extracted and end up in with all the brine saturated all-the-flavour compounds.
Step 2: Caffeine is very light and it rises to the surface of the brine. It is skimed off the top.
What's happening: The remaining liquid contains all the flavour compounds except for the caffeine.
Step 3: The original batch of beans is discarded. New batch is coming in to the brine.
What's happening: In this process the saturated brine is only missing the caffeine. The fresh batch of beans supplies the missing caffeine.
And that’s it! No chemicals, just water and some smart filtering.
Only caffeine leaves these beans. Everything else stays intact. Hence you end up with beans full of flavour but no caffeine.
