The First Crack: Our Morning 15-Minute Ritual (And The Kensington Crew)
A raw look at what goes down inside The Roasterie from the first spark of the flame to closing time.
Maintenance first, coffee second
Every single morning long before we open the doors, we gotta get our hands dirty. Before we even think about lighting up the roaster, we tear the whole machine apart. We're talking scrubbing it down, vacuuming out the leftover chaff, greasing up the gears, and putting it all back together piece by piece. Every two weeks, we take it a step further and climb right onto the roof to clean out the entire chimney stack. Getting up there gives us a sweet view of Kensington waking up, but it is serious work. Cleaning every inch prevents flammable dust from building up so there is zero chance of a fire hazard. With around 100 pounds of coffee roasted here every day in small 5 to 6 pound batches, skipping maintenance is just not an option.
Once everything is clean and put back together, we strike a match, fire up the gas, and start the day. Calling the Calgary fire department before we spark the flame is just our standard drill since day one. Sometimes, people walking down the street, pop inside to let us know there is crazy smoke coming out of our chimney, so we give them a quick lesson on how roasting actually works.
That very first batch sets the tone for everything. Sitting back with our mugs, listening to that first crack echo out of the drum as the beans expand... honestly, that’s our absolute favourite part of the morning. On hot summer days, we get in here crazy early before we open just to beat the heat before the shop turns into an oven. When it's hot and not smokey, we throw open our side window so people can order right from the sidewalk or sit out on the patio. That little coffee window is so much fun.
The morning rush and the regulars
Our very first customer of the day is Lou, without fail, like he has for at least the last 10 years. He's a total espresso connoisseur. Every morning we dial in the grinder to make sure it's absolute perfection, and Lou is always right there helping us test and dial in the best flavour possible.
Right after Lou, the gym crowd rolls in straight from their boxing or strength training classes just as we unlock the doors. Then the rest of our morning regulars start filling the place up. Stacy gets her americano. Mark gets his espresso fix alongside a Vietnamese coffee for his lovely wife, taking a quick moment together over coffee without the kids while Veto, their French bulldog, acts like a furry vacuum cleaner under the patio table hunting for crumbs. Our local celebrity Joanne pops in to journal and hang out while we sling drinks for commuters rushing to catch the LRT.
Then come the dog owners. Shawn and Twil show up next. Shawn gets an americano or a shaken espresso depending on the weather, while Twil acts like he has literally never been fed in his life, so of course we gotta toss him some Pupperoni. As they head out for their walk, Andy and his crew show up, the "flat white buds," three coffee snobs in the absolute best way possible. Then Jim, the local realtor, walks in with that smirk on his face ordering an americano misto. After a few funny, ironic comments he usually has to retreat because we give him plenty of attitude right back.
Midday hustle and a quiet breather
Between serving drinks, we're packing up online orders, prepping restaurant deliveries, chatting with neighbouring business owners, watering our community garden, making social media content, and just vibing the whole morning.
By lunchtime, the crowd shifts. Tourists, Airbnb guests, and local office workers on their break flood the shop looking for a quick caffeine fix. We help them pick their beans, make sure they get their cups fast so they aren't late getting back to work, and keep the line moving. Right after the lunch rush clears, things finally slow down for a bit. That's our chance to grab some food and take a breather.
Dates, gamers, and the late afternoon rush
Around 4 or 5 in the afternoon, the energy picks up again. People driving home from work stop by to grab fresh beans for the week. Then come the couples on their first dates and the gamers as the sun starts going down.
We have this hilarious story from a while back. This guy came in alone and started asking us a million detailed questions about our coffee beans, the processing methods, and the harvests. We figured he was buying a few bags, but then he sat down and waited. Turns out he was meeting a girl for a first date. When she walked up to the counter not knowing what to order, he immediately launched into this whole expert lecture about our coffee menu, repeating word-for-word everything we had just taught him two minutes earlier to try and impress her. Standing behind the bar we were just thinking, girl, run!
A real community
Our clientele is all over the map and we love it. You'll see serious business men and women in tailored suits grabbing lattes right alongside local artists, students, and neighbours in their sweatpants. Our community is so rich, genuine, and unpretentious. Everyone talks to everyone here. People end up sharing tables, or they just close their laptops because the room's conversation gets too interesting, or maybe they're just mesmerized watching the roaster spit out cracking, smokey beans with that massive aroma filling the shop.
Standing here smelling fresh coffee beans roasting right in front of your eyes while drinking a cup from that exact same roast... you can't get a more authentic experience than that. We might be small, but we are mighty.
